Instant Pot Obsession


  • 1/4c vegetable oil
  • 1 medium onion
  • 4 garlic cloves, minced
  • 1 tsp cayenne pepper
  • 2 tsp curry powder
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/4 tsp black pepper
  • 1/2c chicken stock
  • 1/4c rice vinegar
  • 2lb boneless beef chuck roast, cut into 1in cubes


  1. Set Instant Pot to Saute on high heat. Heat the oil and add onion, until just brown. Add garlic and cook for another minute, until fragrant.
  2. Add the cayenne, curry, paprika, salt, ginger, sinnamon, and black pepper. Cook until a paste forms and darkens, about 2 minutes. Add the stock and vinegar and simmer. Scrape up any brown bits and simmer until thickened.
  3. Add the beef and cook on Manual/High for 25 minutes. Let sit for 15 minutes, then release the steam.
